The Lane snapper is different from the red snapper and is found in the Western Atlantic ocean.

I marinade the fish overnight with a fine paste made of salt, red chilly powder, turmeric, ginger, garlic, green chilly, black pepper and a shallot

Please don't try this, but yes, I use my bare fingers because that's the best way to ensure 100%  marinading, however the color of the turmeric stays on my fingers for sometime, even after washing it well ☺
