#Cooking Green Beans with Coconut

After washing and draining, chop beans like shown in the picture below (my wife does this better than I do)

Heat a little oil, add mustard seeds, when they begin to pop, add onions and stir fry. When the onions turn slightly brown add chopped garlic and two dried red chillies, and fry for about a minute. Then add grated coconut and fry for another minute

Add the beans, a little salt, turmeric and cumin powder and mix well
(Btw, turmeric has been used in cooking for more than 4000 years)

Anyway, cook till the beans are just done. Do not overcook

Oh, here is something interesting - cumin is referred to in the old and new testaments of the Bible in Isaiah 28:27 and Matthew 23:23

Did you know that curcumin (the active ingredient in turmeric) has antioxidant and anti-inflammatory properties that prevent cancer and arthritis?
