Cooking Jackfruit Seeds and Shrimp in a Coconut Curry

 
Wash dried jackfruit seeds and soak for a few hours in water.
This is to make it easy to remove the outer skin which is almost like plastic!
 

Fry until light brown, one large onion in a little coconut oil


While that's going on, cut the seeds into half, and remove the outer skin


I added a packet of Thai Green Curry paste that I bought from the Chinese store.
**I never use such pastes or buy readymade powdered spices - I always make my own, but in this case the paste has lemongrass and anchovy fish extract, both of which I don't have at home**
 
 
Add a little coconut milk to the mixture when it begins to stick to the pot


Add the seeds ...


Cook for a few minutes with the lid on, till the jackfruit seeds are soft, and well cooked.
Add the already cleaned and washed shrimp


Cover with the lid, and turn off the heat.
Leave the pot shut for about ten minutes.
 
This is what it will look like.
 
 
Enjoy with rice!
