#Cooking a Spicy Red Pork Curry with Tomato Rice

Cut fresh pork into cubes (yes with the fat on it, because the flavour of the curry depends on it)


You need lots of garlic and onions


Grind the garlic and onions ...


And fry with a little oil till golden brown ...


Add cloves, cumin seeds, cinnamon sticks (not shown in the picture below), black and green cardamom and star anise (By now you know why I love star anise 


Add Kashmiri chilli powder, dry red chillies, salt, and vinegar or red wine if you like  (while typing this, am adding many of these words into the online dictionary as well ☺)


Vary the recipe if you like: With potatoes in the picture above, below without potatoes. Boneless pork above, with bone below 



Cook till very well done! 


Serve with tomato rice (By the way, this rice  is cooked with tomato, garlic, salt, onion, clove, cardamom, cinnamon and red chilly  powder and that's another recipe)
