Cooking Fish and Fungi with Coconut Milk

Stir fry until golden brown, one large sliced onion, then add a finely ground paste of ginger, garlic and green chillies


For this curry I'm going to try golden pomfret


When the mixture begins to stick to the pan, add a little turmeric powder and coconut milk, and continue stir frying till the mixture thickens. 
Then add the fish and fungi that has been washed and chopped up fine (the black stuff in the picture below is the fungi. Got this from Vietnam!)


Add the rest of the coconut milk and cook uncovered till the fish is cooked


Tastes like the green fish curry you get in some  Asian restaurants, only better!

What's a shorebird doing around here?

Saw seven rabbits on our evening walk now. Call it Rabbit Day!


But more interesting was this baby Killdeer learning to fly


And the mother was on the other side of the trail watching as we walked by

Planning the next road trip

I can make my plans, but based on my past experiences,
It is the GOD who created thunder and lightning, 
Tornadoes and volcanoes, 
Tsunamis and super storms, 
Who will eventually make it happen.
So I have to ask HIM for guidance

Coyote on our evening walk


Been waiting to see Coyotes in the area, and finally on our evening walk just now ...


About 500 metres away ...


The Coyote was running alongside the trees, and I was running towards it to get a closer picture. And then it saw me and stopped 


Here is what it is probably after. We saw three of these ...


After about fifteen minutes of hide and seek, it appeared further down the trail 
(always good to spot wildlife before they spot you!)


And the coyote posed for this picture before disappearing into the evening



 Once upon a time, we saw foxes along with their cubs on the same route. 
Whether it's a Coyote or a coywolf, I'm not sure,
But truly happy to see it around here!

The Ferrari F40 was built from 1987 to 1992 to celebrate Ferrari's 40th anniversary. 
It has a mid engine rear while drive configuration


2.9 L twin turbocharged engine delivering 471 hp



Back in the '90's it was the fastest and most expensive Ferrari on the road



Acceleration 0-100 km/h (60 mph) in 3.9 seconds


The F40 was the last Ferrari that was personally approved by Enzo Ferrari
